Create a new page, leave content empty. Navigate to Dasboard -> Settings -> Reading and change the posts page to the page for blog you just created. Posts will show up on the blog page.
To change layout please go to Theme Options -> Blog Options and choose layout with Blog Layout option and Sidebar with Sidebar Position option.
